Trying again


- 125g flour
-  80g water + 2 tbsp /w 1/8 teaspoon BMY

Consistency is wet but not soaked like the previous one.  I've seen
this consistency before and it turned out well.

Final dough 
- Biga
- 250g flour
-  80g water
- 2tbsp milk + 1/2 teaspoon BMY
- 1 1/2 teaspoon salt
- 1 tablespoon olive oil

Same consistency, fairly wet.  Good rise but saggy.  I put it in the
oven during the pre-head phase to get a longer in-oven rise.  That
didn't seem to do make much difference.
